Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy?
Growing up in San Antonio and traveling extensively have both played significant roles in shaping my philosophy. San Antonio's vibrant culture and diverse culinary scene have instilled in me a deep appreciation for authentic flavors and experiences. Additionally, my travels to different countries have exposed me to a multitude of culinary traditions, fostering a global perspective that influences my approach to creating unique dining concepts.
Tell our readers an interesting fact or two about yourself.
One interesting fact about me is that I have a passion for interior design and architecture. This love for aesthetics is reflected in the thoughtfully curated ambiance and design of each of our restaurants. I believe that the ambiance plays an essential role in enhancing the overall dining experience and creating lasting memories for our guests.
Tell us about your absolute favorite food and why readers should try it if they haven’t already.
One of my absolute favorite foods is paella. The combination of saffron-infused rice, tender meats, succulent seafood, and aromatic spices creates a symphony of flavors that is truly unparalleled. Paella is not just a dish; it's a celebration of community and togetherness. I encourage readers to try it because it embodies the essence of Spanish cuisine and showcases the artistry and craftsmanship that goes into creating a memorable culinary experience.
What are three ingredients that you simply couldn’t live without?
Three ingredients that hold a special place in my culinary repertoire are cheese, rice, and eggs. Cheese brings a delightful creaminess and richness to dishes, enhancing their flavors and textures. Rice, with its versatility, serves as a canvas for creating diverse and satisfying meals. And eggs, with their incredible versatility, can be transformed into countless delectable dishes, from comforting breakfasts to savory main courses. These ingredients form the backbone of many beloved recipes and add an element of indulgence to any culinary creation.
What is one of your greatest accomplishments and/or recent awards you've earned?
One of my greatest accomplishments is successfully opening multiple restaurants and establishing Gusto Group as a renowned culinary brand. Each new location has been a testament to our team's dedication and passion for delivering exceptional dining experiences. While awards are gratifying, the real measure of success lies in the smiles and satisfied palates of our guests.
What are some of the latest trends you’re seeing in top restaurants across the globe?
One of the exciting trends I'm observing in top restaurants is a shift towards offering comprehensive experiences that go beyond just delicious food. People are seeking immersive dining experiences that engage all their senses. It's not just about what's on the plate; it's about creating a captivating ambiance, incorporating innovative technology, and curating unique moments that leave a lasting impression. From interactive chef-led experiences to immersive themed dining events, top restaurants are embracing the concept of holistic experiences to delight and engage their guests on a whole new level.
What’s your favorite cocktail or beverage of choice?
As a lover of tequila, my favorite go-to cocktail is a refreshing Paloma. The combination of vibrant grapefruit soda, zesty lime, and the smoothness of tequila creates a perfect balance of flavors. It's a drink that embodies the spirit of Mexico and captures the essence of relaxation and celebration. Whether enjoyed on a sunny beach or during a lively gathering, the Paloma never fails to deliver a delightful and invigorating experience. I highly recommend trying it if you haven't already, as it's a fantastic way to appreciate the versatility and complexity of tequila in a truly satisfying cocktail.
