Tell us about what your morning routine looks like, and how you like to end your day?
My day begins with a hot cup of coffee followed by a brief moment of reflection and planning. Afterward, I focus on preparing my dough and managing inventory. I also ensure all job preparations for the day are completed efficiently. Evenings are typically spent having dinner with my wife, Angela, where we review the day’s progress and then planning for the day ahead.
Do you have any awards or achievements you’d like to mention?
We are proud to have been awarded “Best Pizza Overall” in the recent friendly pizza competition held in our hometown. In addition, our signature Sweet Heat pizza — a unique blend of bacon, honey, and hot cherry peppers — won the “Most Unique” category. The Sweet Heat pizza has been a staple on our menu for 6 to 7 years, crafted long before the popular hot honey trend emerged nationally.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I can’t really say I have a favorite chef. There are many great chefs out there from whom you can draw ideas, wisdom, and valuable lessons. Most of my personal influences came from my grandfather, my mother, my wife and her family. They are all amazing chefs . My advice is to be operationally sound and don’t be afraid to experiment and try new things. Not every idea will succeed, but it’s a crucial part of developing your unique flavor profile. If you’re going into business with a partner, find someone whose skills complement your own. My wife Angela, who owns the business, could teach a master class in customer service. Her expertise makes my life much easier and allows me to focus on the back of the house operations.

What do you typically cook at home?
I cook a broad variety of dishes, ranging from burgers to brisket, but one of my favorite go-to meals is Chicken Marsala. My approach is to find dishes I enjoy and strive to master them through practice and refinement.
What’s a food trend that you’re loving right now and why?
Having honed our craft in the New Haven region it’s exciting to be a part of the pizza scene. Clearly we have to acknowledge a good portion of that has come from the spotlight Dave Portnoy on the pizza industry and our specific style of pizza.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Growing up, my family was fortunate enough to travel extensively, exposing me to a wide variety of regional cuisines—many of which some might consider quite exotic. I genuinely enjoyed exploring all these flavors. However, one memorable experience was being served a peanut butter and bacon pizza, which just wasn’t for me. That was definitely a strange combination.
What drink do you enjoy most?
I would say my favorite drink would be a good bourbon.
Have you ever cooked for a celebrity? Do you have a story to tell?
We have had the privilege of cooking for a few celebrities and well-known individuals.. Out of respect for their privacy, I do not discuss client details publicly. However, one event I’m happy to mention is our annual participation in the Geno Auriemma’s For The Kids Golf Tournament, which attracts numerous celebrities each year.
