Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in the South and I draw inspiration from a wide variety of foods and cooking shows.

My signature dishes would be described as fusion where I love to combine various elements from different cuisines into an amazing dish. Especially, focusing on Southern cuisine and fresh ingredients.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

Anything Japanese. Everything is simple and fresh where you can really taste what mother nature gives you.

What are three ingredients that you simply couldn’t live without? 

Garlic, salt and fresh seafood.

Following my heart and letting the food speak to me with my ancestors whispering sweet nothings in my ear.

Tell us about one of the most creative dishes you’ve created?

A dry aged risotto is high on my list. I made a consommé for the risotto using scraps of dry aged beef and finished with small diced pieces of steak.

What is one of your greatest accomplishments and/or recent awards you've earned?

Starting from the bottom now I’m here.

What are some of the latest trends you’re seeing in top restaurants across the globe?

Smoke infusion with food and cocktails.

What’s your favorite cocktail or beverage of choice?

Jameson neat or if I’m feeling fancy a nice bourbon.
