Tell us about what your morning routine looks like, and how you like to end your day?

I’m an early riser, so a 4 a.m. wake-up is pretty standard. I like to ease into the day with a cup of coffee while catching up on emails and the news, then I’m at the gym by 5:30 a.m. until about 7. After that, it’s home to walk the dogs, get some breakfast in, and head to the office by 9 a.m. At night, I keep things simple–an early dinner with my wife, Lauren, a bit of TV with our phones off, and in bed by 8:30 p.m. or so.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

My favorite chef will always be Emeril Lagasse. I grew up watching his shows in the ’90s—How to Boil Water, Essence of Emeril, Emeril Live—that’s really where it all started for me. As for advice: find balance. This industry will take everything you give it if you let it. Make time for your people, your hobbies, your life outside the kitchen. Otherwise, you risk burning out on something you once loved.

Do you have any awards or achievements you’d like to mention?

I was honored as “Restaurateur of the Year” in 2016, received a “Key to the City of Las Vegas” in 2024, and was named to the “Top 40 Under 40.” I’ve also had the opportunity to cook at the James Beard House and was recognized as one of the “Top 100 Men in Las Vegas.”

What do you typically cook at home? 

My wife and I try to keep things pretty healthy, so I’ll meal prep once or twice a week. But if I’m cooking for fun, it’s breakfast—no question. It’s always been my favorite meal, and eggs are my go-to. They’re the most versatile ingredient in the kitchen and you can do just about anything with them.

What’s a food trend that you’re loving right now and why?

There are some great things happening like more fiber-forward dishes, cabbage finally getting some respect again, flavors like pandan popping up. But what I really love is the move toward smaller portions. Bigger isn’t always better anymore. People are more mindful of both health and cost, and this shift hits both.

What drink do you enjoy most?

I drink a lot of water—thrilling, I know. But when I’m having something for fun, it’s tequila. Reposado, one big ice cube, orange peel. Simple and perfect.

Have you ever cooked for a celebrity? Do you have a story to tell?

We’ve had a lot of celebrities come through over the years including musicians, actors, athletes, chefs, but one of my favorite moments was when Gordon Ramsay came in for dinner. We have a swear jar on the counter that doubles as a tip jar for the kitchen (we want the food to be so good it makes you cuss.) On his second visit, he walked up, told the team the food was “f*cking brilliant,” and dropped some cash in. I’ll keep the amount to myself, but let’s just say he understood the assignment.

What’s the strangest food combination you’ve ever tried? And, did you like it?

Black coffee and sharp cheese... and I absolutely loved it.
