Tell us about what your morning routine looks like, and how you like to end your day?

My morning starts with coffee and time outside watering my plants and spending an hour or so with my dog before heading into work. It's a good way to ease into the day. On the other end, no matter how busy things get, I make a point to sit down for dinner with my wife. That time together matters.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

If I had to pick a favorite chef, I would say Francis Mallmann. My advice to anyone coming up in this industry: keep an open mind, never stop learning, and hold yourself accountable. Those three things will take you further than almost anything else.

Do you have any awards or achievements you’d like to mention?

I've taken first place several times at the “Riverside Casino Culinary Classic” across the duck, beef, and seafood categories.

What do you typically cook at home?

Korean beef bowls are a regular, and I'm always happy to get steak going on the grill. My wife also makes an herb lemon baked salmon that I'd put up against anything.

What’s a food trend that you’re loving right now and why?

Honestly, my favorite trend is discovering something I've never cooked before. Ethnic cuisines from around the world keep me constantly curious—there's always a new technique, ingredient, or flavor profile worth exploring.

What drink do you enjoy most?

Topo-Chico. Simple and perfect.

Have you ever cooked for a celebrity? Do you have a story to tell?

Over the years, yes—a mix of musicians and comedians. No stories to tell; a good chef knows how to keep a secret. I'll just say the plates were clean and the company was good.
