First Look: Michelin-Starred Restaurant Chefs Fabio Trabocchi and Michael Mina Curate Culinary Experiences Aboard Ilma, the Second Fleet From the Ritz-Carlton Yacht Collection
Building on its commitment to exceptional guest experiences and cultural connection, Ilma, the eagerly anticipated second ultra-luxury super yacht from The Ritz-Carlton Yacht Collection, will introduce five restaurants, seven bars, and a wine vault, each promising culinary delight.
Slated to set sail on its maiden voyage in September 2024, Ilma’s culinary highlights will include Seta su Ilma by Chef Fabio Trabocchi, a modern Italian fine-dining restaurant, and the Beach House, a vibrant open-air eatery featuring a Pan-Latin and Caribbean menu created in collaboration with Chef Michael Mina.
Notably, this marks both Chef Trabocchi’s and Chef Mina’s first ventures at sea.
These concepts will complement Memorī, which will serve contemporary Pan-Asian dishes; Mistral, which will offer Mediterranean flavors; and Tides, which will present a regionally inspired menu.
Drawing inspiration from Fabio Trabocchi’s Italian heritage and expertise in Italian cuisine, Seta su Ilma, will welcome diners each evening with a seven-course seasonal tasting menu, featuring feature a contemporary interpretation of Italian cuisine, nodding to regional flavors.
At the Beach House, bright, airy interiors will flow into an expansive outdoor pool deck, creating an effervescent setting for enjoying Pan-Latin cuisine alongside craft beers, bold wines, and an elevated tequila selection.
