Tell us about what your morning routine looks like, and how you like to end your day?
My mornings usually begin long before the rest of the world is awake. The first order of business is starting fires and trimming meat. There is something deeply satisfying about stepping into the quiet darkness, lighting a wood fire, and preparing for a day that will ultimately bring people together around great food.
As the fire settles into a steady burn, I move on to trimming briskets, pork shoulders, and whatever else is destined for the smoker that day. It's a process that requires patience, attention to detail, and respect for the craft. Every cut of meat is different, and every day presents its own challenges. Those early hours are often my favorite because they provide a chance to focus, think, and set the tone for the day before the pace inevitably picks up.
The rest of the day is spent tending fires prepping our home-made sides and working alongside a great team. Barbecue is not a business for those seeking shortcuts; it rewards consistency, hard work, and a willingness to adapt when things don't go exactly as planned.
I like to end my day much the same way I begin it—with a moment of reflection. After the last customer has been served and the equipment is cleaned, I enjoy sitting down with my family, sharing stories from the day, and appreciating the people who make all the hard work worthwhile. There is a unique sense of fulfillment that comes from knowing you've spent the day creating something by hand and bringing a little joy to others through food.
Whether the day was smooth or challenging, I try to end it with gratitude. The fire may be out for the night, but the opportunity to do it all again tomorrow is something I never take for granted.
Do you have a favorite pitmaster that you look up to and what advice would you give to aspiring chefs?
One of the chefs I admire most is John Bates from InterStellar Barbecue. What I appreciate about him goes beyond the food itself. He represents the combination of creativity, relentless work ethic, and commitment to quality that defines true craftsmanship. He has shown that barbecue can honor tradition while still pushing boundaries, and that success comes from a willingness to constantly learn, improve, and evolve.
If I could offer one piece of advice to aspiring chefs, pitmasters, or anyone pursuing a career in food, it would be this: don't stop. Never quit pushing for the dream. The culinary world is demanding. There will be long days, early mornings, late nights, mistakes, setbacks, and moments when success feels far away. The people who ultimately succeed are rarely the ones with the easiest path; they're the ones who continue showing up when things get difficult. Every challenge is an opportunity to learn something new, refine your craft, and become better than you were the day before.
I would also encourage aspiring chefs to focus on mastering the fundamentals before chasing recognition. Learn to respect the ingredients, understand the process, and take pride in consistency. Trends come and go, but craftsmanship never goes out of style.
Most importantly, remember why you started. Food has a unique ability to bring people together, create memories, and celebrate life's most important moments. If you stay passionate about serving others, remain humble enough to keep learning, and refuse to give up on your vision, success has a way of finding you.

Do you have any awards or achievements you’d like to mention?
We have been fortunate to be recognized by our community through multiple nominations and Top Three placements in Oil City's Best over the past several years. While we are certainly proud of those honors, what makes them especially meaningful is that they come directly from the people we serve. To us, there is no greater validation than earning the trust and support of our customers and community.
Interestingly, we have intentionally chosen not to participate in barbecue competitions or the competitive barbecue circuit. While we have tremendous respect for those who do, our focus has always been on creating the best possible barbecue experience for our guests rather than tailoring our product to a judging table. Competition barbecue often rewards a very specific style, flavor profile, and presentation designed to impress judges in a single bite. We believe that in pursuing those standards, some of the qualities that make great barbecue for family, friends, and loyal customers can sometimes be lost.
Our greatest achievement is not a trophy or ribbon—it's the fact that people continue to invite us to be part of their celebrations, recommend us to others, and come back year after year. We measure success by the relationships we've built, the memories we've helped create, and the trust our community places in us every time they choose our barbecue.
What do you typically cook at home?
People are often surprised to learn that when I'm cooking at home, barbecue isn't always on the menu. Like many families, we tend to gravitate toward the meals that bring everyone around the table and feel like home.
With boys who have always had big appetites, our family has built quite a roster of favorite comfort foods over the years. We cook a lot of Italian-inspired dishes and hearty family meals—from homemade chicken pot pie and rich chicken cacciatore to pasta dishes that can feed a crowd. These are the recipes that have become part of our family's story, the meals requested for birthdays, holidays, and ordinary weeknights alike.
What I enjoy most about cooking at home is that it allows me to slow down and cook purely for the people I love. While barbecue is a craft that requires precision, patience, and countless hours tending a fire, home cooking is often about comfort, tradition, and sharing time together. Some of my favorite memories have been made around a dinner table filled with simple, homemade food and plenty of conversation.
At the end of the day, whether it's a perfectly smoked brisket or a bubbling chicken pot pie coming out of the oven, the goal is really the same: bringing people together and creating a meal that makes them feel cared for.
What’s a food trend that you’re loving right now and why?
One food trend that I am particularly excited about right now is the evolution of craft barbecue through fusion and cross-cultural influences. Barbecue has always been rooted in tradition, and those traditions deserve tremendous respect, but some of the most exciting developments in the industry are happening where barbecue intersects with other culinary cultures.
I love seeing concepts like "Mexicue" and other barbecue-inspired fusion cuisines that thoughtfully blend traditional smoked meats with flavors, techniques, and ingredients from different ethnic backgrounds. Whether it's smoked brisket folded into authentic tacos, Korean-inspired barbecue creations, or dishes that incorporate flavors from Latin American, Asian, or Mediterranean cuisines, these influences are expanding what barbecue can be while still honoring its roots.
What makes this trend so appealing is that it reflects the way food naturally evolves. Great food tells a story, and fusion cuisine often brings together multiple stories, traditions, and experiences on a single plate. When done thoughtfully, it doesn't replace traditional barbecue—it celebrates it by introducing new dimensions of flavor and creativity.
As a pitmaster, I find that incredibly inspiring. The foundation will always be quality meat, wood fire, patience, and technique. But seeing chefs and pitmasters use those fundamentals as a canvas for innovation keeps the craft fresh and exciting. It reminds us that while tradition provides the roots, creativity is what allows the tree to keep growing.

Have you ever cooked for a celebrity? Do you have a story to tell?
Yes, we have had the opportunity to cook for a few recognizable faces over the years, but one experience that stands out was serving Ming Chen, best known for his role on AMC's popular television show Comic Book Men, when he visited our food trailer.
Like many days in the barbecue business, it started out as a normal service. One of the things I enjoy most about running a barbecue operation is that every customer gets the same level of care and attention, whether they're a first-time visitor, a longtime regular, or someone with a public profile. Great barbecue is about hospitality as much as it is about food. Ming ordered our Big Tex Sandwich, one of our signature menu items, and I was thrilled to hear that he was a big fan of it. As any pitmaster will tell you, there's a certain satisfaction that comes from seeing someone genuinely enjoy something you've spent countless hours perfecting. From tending the fire and smoking the meat to building the final sandwich, every step represents a commitment to the craft.
What made the experience especially memorable was that I had watched Ming on ComicBook Men and appreciated his enthusiasm and personality long before he ever stopped by our trailer. Seeing someone whose work you've followed enjoying your food creates a unique full-circle moment that is both humbling and rewarding.
What I remember most, however, wasn't that a television personality stopped by. It was the reminder that good food has a way of bringing people together. Whether you're serving a celebrity, a ranch hand, a family celebrating a special occasion, or someone grabbing lunch on a busy day, the goal is always the same: create an experience worth remembering.
Of course, it's fun to have a story about a celebrity enjoying your barbecue, and we're proud that Ming Chen enjoyed the Big Tex. But at the end of the day, the greatest compliment is seeing anyone finish a meal with a smile and knowing they would gladly come back for another one.

What’s the strangest food combination you’ve ever tried? AND did you like it?
One of the strangest food combinations I've ever tried was strawberries with freshly cracked black pepper, and interestingly enough, I first experienced it as a teenager while visiting Bibione Beach in Italy. At the time, it seemed like a pairing that made no sense. Strawberries belonged in desserts, and black pepper belonged on savory dishes. Yet there they were, served together as if it were the most natural thing in the world.
To my surprise, it was absolutely delicious.
What I learned from that experience is something that has stayed with me throughout myculinary journey: food often rewards curiosity. The pepper doesn't overpower the strawberries; instead, it enhances them. The subtle warmth and earthy complexity of the pepper bring out the fruit's natural sweetness and create a depth of flavor that is both unexpected and remarkably balanced.
Looking back, that simple dish was an early lesson in the idea that great food isn't always about complexity. Sometimes it's about discovering harmony between ingredients that seem completely unrelated but somehow make each other better. As a cook and pitmaster, I've come to appreciate those moments because they challenge assumptions and remind us to keep an open mind. That spirit of exploration is one of the things I love most about food. Whether it's a traditional barbecue recipe or an unexpected combination discovered on a beach in Italy, some of the best culinary experiences happen when we're willing to step outside our comfort zone and try something new. In the case of strawberries and black pepper, I'm certainly glad I did.
