We sat down with Libby Lewis and Jenna Waldron of Island Thyme Food Truck in Pennsylvania. The food truck offers homemade meats, sauces, and carefully crafted dishes. They also bring the essence of beach flavors to those who can't be there in person. With a soundtrack ranging from Reggae to the Beach Boys, they create an atmosphere that makes guests feel as if they’re enjoying their meal right on the beach—even though they are located four hours away.
Tell us about what your morning routine looks like, and how you like to end your day?
We start our day with grilling up to 40 pounds of jerk chicken and steaming our coconut Thai rice. We like to end the day with a cold beer and some family time.
Do you have any awards or achievements you’d like to mention?
We won “Best of Lebanon County” in 2022.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Alton Brown is our favorite chef - we like to embrace our mistakes and use them to propel us forward to perfection.

What do you typically cook at home?
We lean toward cooking lots of Mexican dishes at home.
What’s a food trend that you’re loving right now and why?
We are loving the art of smoking right now, so many avenues to explore with smoking.
What’s the strangest food combination you’ve ever tried? And, did you like it?
The strangest food we tried was a breakfast sandwich with fig jam and yellow mustard on it.
What drink do you enjoy most?
We love a good margarita and also enjoy Pacifico Beer.
Have you ever cooked for a celebrity? Do you have a story to tell?
Never cooked for a celebrity. I did cook for my own wedding in 2009 and thats how our jerk chicken craze got started. It was always requested at every family get-together. That recipe was changed and refined over the years. It started as the first cuisine we made on the truck in 2020 and now 5 years later would not dare take it off the menu.

We put many hours of love in to our food. I would venture to say it is gourmet. homemade meats, sauces and crafted dishes is what you will get if you visit our truck. We also add the experience of getting Beach vibe flavors for those who can't vacation there. We play music selections from Reggae to the Beach Boys. It makes our patrons feel like they are waiting for their food at the beach even though we are 4 hours away from one.
