Tell us about what your morning routine looks like, and how you like to end your day?
My day begins at 4:00 AM. I make my coffee, and before I do anything else, I hug my dog, Indigo, and tell him I love him about three thousand times. I head to the gym for weights and cardio to get my mind right. I’m at the restaurant no later than 7:00 AM every day. I love to end my day by simply getting home to be with my wife and my kids.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
My favorite chef is Marco Pierre White. For aspiring chefs, my advice is to work on yourdiscipline. When motivation runs out—and it will—you always have your discipline to fall back on. Once you’ve mastered discipline, consistency will follow. I feel discipline and consistency are the two most important things, not just for being a chef, but for life in general.

What do you typically cook at home?
Since I’m from Long Island and the five boroughs, I always love to make a very simple, high-quality chicken cutlet with some fresh-squeezed lemon.
What’s a food trend that you’re loving right now and why?
I’m not big on following trends; we prefer to be cutting-edge and set our own standards. However, smash burgers have been a massive hit at our restaurant, so I definitely enjoy those. I also love the trend of bringing touches of elegance to bar food—using ingredients like truffles or high-quality truffle oil allows us to introduce fine-dining elements to a bar atmosphere.

What drink do you enjoy most?
A smoothie with just fruits and plain Greek yogurt will always be a great drink for me.
Have you ever cooked for a celebrity? Do you have a story to tell?
Most recently, we cooked for the directors of the hit TV series Yellowjackets. It happened completely by accident—they came in unannounced, and my staff was talking about the show because we all watch it. When she overheard us, one of the directors asked a waitress what we were discussing, and that’s how we met! It was an amazing experience; they even provided us with one-of-a-kind art drawings to hang in the restaurant and still give us shout-outs to this day. We’re so excited to have that relationship.

What’s the strangest food combination you’ve ever tried? AND did you like it?
When I was a kid, one of my cousins made a sandwich with banana, peanut butter, and chocolate syrup. Back then, it was definitely different, but I loved every second of it!
