Tell us about what your morning routine looks like, and how you like to end your day?
My day starts with prayer, meditation, gratitude, journaling, and stretching. From there, I’ll spend a couple of hours training, grab a great cup of coffee, and visit local markets and shops in search of quality ingredients. Then it’s time to get into the kitchen and create. No matter how busy the day gets, I always try to catch the sunset. I believe consistency and gratitude are everything—even on the rainy days. What we’re thankful for today becomes the foundation for tomorrow.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Thomas Keller for his pursuit of perfection, Grant Achatz for his innovation, and Anthony Bourdain for his curiosity and appreciation of cultures around the world. Their influence continues to inspire my own pursuit of unique flavors, experiences, and stories through food.

Do you have any awards or achievements you’d like to mention?
I’m genuinely happy with the life I’ve built. I’m the chef-owner of a restaurant and surf shop in Panama while also serving as Executive Chef at The Highlander. Finding balance between my businesses, my passion for food, and the lifestyle I love has been one of the greatest rewards of my life.
What do you typically cook at home?
I keep it simple and healthy: turkey, fish, steak, eggs, fruits, and vegetables. And lots of water—more than anything else.
What’s a food trend that you’re loving right now and why?
Right now, I’m drawing from my travels and experiences around the world to create a fusion of Basque, Afro-Caribbean, and Mediterranean influences. I enjoy finding connections between cultures and expressing them through food.

Coffee, tea, and fresh juice.
Have you ever cooked for a celebrity? Do you have a story to tell?
I've had the privilege of cooking for a number of celebrities and prominent families throughout my career. Out of respect for privacy, I don't discuss specific names, but many of those experiences have been incredibly meaningful and have shaped me both professionally and personally.

What’s the strangest food combination you’ve ever tried? AND did you like it?
I have a friend who swears by grilled cheese and ketchup, which some people might find unusual. For me, camel was definitely a unique experience. Growing up, I was exposed to foods that many people would consider uncommon, including crane, fermented turtle eggs, and various reptiles. Those foods were simply part of my culture and helped shape my appreciation for diverse cuisine.
