The focus here is simple but powerful: slow-smoked meats, quality ingredients, and consistency. Everything—from brisket and pulled pork to ribs and smoked chicken—is cooked low and slow, delivering deep, smoky flavor in every bite.

Tell us about what your morning routine looks like, and how you like to end your day?

Depends on the day. On days we’re open, I head to the restaurant fairly early, fire up the smokers and go over my cooking and prep plans for the day before it gets too busy. If we’re not open, I get a chance to sit down and enjoy some coffee and conversation with my wife. I end my day at the restaurant by reviewing the day planning for the next day so tomorrow runs as smoothly (hopefully) as today. Then I try to switch out of BBQ mode and enjoy time with my family at home. My youngest son and I have been rewatching all the Marvel movies... which seems like a never-ending journey!

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

I don’t have a specific favorite chef, but I have had the opportunity to spend time with some great pitmasters through the NBBQA (National BBQ Association). They are a wealth of knowledge and are willing to share that knowledge, which has helped me along the way. And that would be my advice: find someone who can help you grow and be willing to do the same for others.

Do you have any awards or achievements you’d like to mention?

I’ve won our local “Best of the Best” the past few years for Overall BBQ, and specifically for ribs.

What do you typically cook at home? 

I really enjoy grilling. To me there is not much better than a perfectly grilled ribeye or flank steak.

What’s a food trend that you’re loving right now and why?

I’m hoping that it’s more than just a trend, but I’m loving that there is so much more focus on clean ingredients and getting junk out of our food.

What drink do you enjoy most?

I don’t drink much, but if I do, I enjoy Hendrick’s gin and tonic. Mainly it’s water, coffee, and an occasional Coke Zero.

Have you ever cooked for a celebrity? Do you have a story to tell?

I have not cooked for any celebrities, but I get to cook for a lot of great people. We see a lot of our local law enforcement and first responders in the restaurant. And my wife regularly hosts events for special needs families, and I often get to cook BBQ for them. I love that we can be a blessing to those families.

What’s the strangest food combination you’ve ever tried? AND did you like it?

I heard about an African Peanut Stew called Maafe, which has peanut butter, tomato sauce, sweet potatoes, and a bunch of different spices. I made it and it was fantastic!

Why should readers visit Big Dan’s BBQ in Catawissa, Pennsylvania?

Before I had the restaurant, I loved hosting and cooking for people at our house. That’s the same feeling I strive for at Big Dan’s. I want you to enjoy a great meal in a relaxed environment, taking a little break from the craziness of the world. We don’t have TVs in the restaurant. Our staff is friendly. We do our best to remember your name. It’s like an extension of my back yard.
