Where did you grow up and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up on Amelia Island in North Florida, the son of a teacher, which led me to originally want to go into education. I worked in kitchens while attending college with the intent of becoming an elementary school teacher but quickly realized my passion for the culinary arts. I still lean on my experiences growing up in the education field in how I go about managing my staff and their continuing education in the hospitality field.

Tell our readers an interesting fact or two about yourself. 

In addition to cooking I am also an avid animal lover.

Tell us about your absolute favorite food and why readers should try it if they haven’t already. 

I don't really have a favorite food but I enjoy spending my days off cooking BBQ and broth style dishes at the house for friends and family.

What are three ingredients that you simply couldn’t live without? 

Fennel (the entire bulb for different uses), fresh thyme, turmeric, fresh dill and fresh citrus.

We love the art behind plating. What do you love about designing the perfect dish? 

Designing the perfect dish is more than just the act of plating. It is paramount that attention is paid to every aspect of the preparation of the dish... The technique within each component of the dish... The consistency and viscosity of the sauce that accompanies the dish... The colors that appeal to the eyes... And, most importantly, that each ingredient works together to balance the individual flavors on the guests palates.

Tell us about one of the most creative dishes you’ve created?

The current crudo preparation on the menu is one that I am particularly proud of. It pays homage to a classic Vietnamese flavor profile focusing on the pairing of turmeric and fresh dill. It is a truly vibrant dish that jumps off of the plate and the flavors all work very well together.

Restaurant Orsay has received an award from Wine Spectator for its wine list and is also a AAA four diamond-rated honoree since 2015.

What are some of the latest trends you’re seeing in top restaurants across the globe?

There are a lot of restaurants around the world playing with vegan charcuterie. Taking whole vegetables and curing and aging them the way a salumi would be aged.

What’s your favorite cocktail or liquor?

I-10, a locally brewed IPA made by Intuition Ale Works.

What do you love about being Executive Chef at Restaurant Orsay in Jacksonville, Florida?

I feel very blessed to be able to come to work everyday and cook alongside my very dear friends. We always have a great time going to battle week in and week out. The reward of seeing our guests enjoying our hospitality from both the dining room and the kitchen is definitely what I enjoy the most about being the Executive Chef at Restaurant Orsay.
