Where did you grow up and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in Ireland. New York City was the place that I feel helped inspire and shape my cooking philosophy.

Tell our readers an interesting fact or two about yourself. 

I was an aerobics instructor and I was in the Military Police in Ireland.

Tell us about your absolute favorite food and why readers should try it if they haven’t already. 

Pho. It’s a balance of herbs and fresh protein. There’s minimal oil and dairy in it so it’s a healthy option as well, but does not lack flavor!

What are three ingredients that you simply couldn’t live without? 

Garlic, salt and herbs.

We love the art behind plating. What do you love about designing the perfect dish?

When designing the perfect dish, the things I concentrate on the most are the balance, color and height.

Tell us about one of the most creative dishes you’ve created?

Halibut over grilled watermelon, with corn, mint and lemon salsa.

I’m a member of Chaine des Rotisseurs, as well as the American Culinary Federation.

What are some of the latest trends you’re seeing in top restaurants across the globe?

Recently, I feel like the trend seems to be getting back to traditional techniques. But still with a bit of a twist and personality. Definitely chefs are thinking about getting good looking dishes out and making them “Instagrammable.” I also think there’s a huge trend of utilizing fresh ingredients and making health conscious dishes as well.

What’s your favorite cocktail or liquor?

Powers Irish Whiskey and Guinness.

What do you love about being the Executive Chef at Swamp Fox at The Francis Marion Hotel in Charleston, South Carolina?

I love being the chef here at the Francis Marion Hotel because its an ever changing environment. There’s a challenge of meeting a wide range of guest expectations and I have creative license to exceed those expectation. Also, my staff and the hotel’s staff overall are amazing!
