During the next 150 years, 23 South Water Street served as a gas station and an art studio. In the 70s, it became the Rose & Crown. “The Crown,” has been serving islanders and visitors for the past 40+ years.
Tell us about what your morning routine looks like, and how you like to end your day?
I make breakfast for my son and I before getting him ready for school. Then I head to the Rose & Crown so that I can be the first one in. I like to start my day alone in the kitchen preparing all the master sauces for the crew coming in.
Do you have any awards or achievements that you are most proud of?
I came in 1st place at a competition in Antigua for a Dragon Ice Sculpture I created.
Do you have a favorite chef that you look up to, and what advice would you give to aspiring chefs?
I look up to Chef Valmore Brown, Founder and Co-Owner of Valelse Sports Bar & Soup Kitchen, who has over 35 years of experience in the culinary world. He has worked in the United States for many prestigious establishments such as Turnberry Isle, Four Seasons, Mandarin and Boca Raton Resorts in various culinary leadership positions.
Chef Brown came back to the Caribbean where he worked with Sandals in the capacity of Executive Chef for 8 years, overseeing 70 staff and 9 restaurants. He then joined the Royalton Resort team where he led the culinary team of 178 staff and oversaw a total of 18 food outlets.
What do you typically cook at home for yourself or your family?
I tend to cook comfort food — lots of stews with authentic Caribbean flavors. For me, comfort food brings people together.
What’s a food trend that you’re loving right now and why?
Mushrooms as a protein alternative. I am allergic to beef so I like to find other ingredients I can use while keeping the flavors and textures intact.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Fried Snake. I was really surprised how much I enjoyed it!

What cocktail or beverage do you enjoy most?
I like to enjoy some Irish whiskey. My go-to is Jameson.

We love what we do! 95% of our menu is house-made. We take great pride in providing our guests with great, reasonably priced food and great service. Most of our staff have worked together for more than a decade so we are a tight knit group whose motto is... “If you can’t have fun here, you can’t have fun anywhere!”
