We sat down with Executive Chef Finn Treece of Finn's Chophouse in Spring Lake, Michigan. Located near Grand Haven in the heart of Spring Lake Village, Finn’s is an American chophouse with a fresh take on historical Southern cuisine.
1. Tell us about what your morning routine looks like, and how you like to end your day?
I typically wake up around 4:30am-5:00am, drink my coffee, head to the gym, and then make my way into the restaurant. I spend most the morning prepping the kitchen, planning features, and doing any of the pickling or set up needed before dinner service.
I like to end my day relaxing with my beautiful wife and two dogs while decompressing from kitchen life.
2. Do you have any awards or achievements that you are you most proud of?
I was voted “Best Chef Locally” in 2022.
3. Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
My favorite chef is probably Sean Brock. I love what he does and what he stands for. My advice is to take your time, learn the craft, find what ignites your passion in this industry, and learn from all the old school chefs that you can, but don’t let it make it you bitter. Stay humble.
4. What do you typically cook at home for yourself or your family?
My wife is a massive fan of anything pasta, she loves a good homemade gnocchi and sauce. Comfort food.
5. What’s a food trend that you’re loving right now and why?
I love that chef’s have started focusing on being more sustainable, reducing food waste, and are finding their way back to the roots of different cuisines — bringing the old recipes back and reinventing the classics.
6. What’s the strangest food combination you’ve ever tried? And, did you like it?
One of the stranger combinations I have had was a Gorgonzola Chocolate Tart, I was not a fan but I understand where they were going with it.
7. Have you ever cooked for a celebrity? Do you have a story to tell?
I have not had the opportunity to cook for any celebrity per say but have the opportunity to cook for some high-profile political events, always an interesting experience to say the very least.

9. What cocktail or beverage do you enjoy most?
Once in awhile I will enjoy a nice Old Fashioned, but I am not much of a drinker myself. I really enjoy a nice espresso.

People should visit Finn’s Chophouse to experience a culinary journey; my roots and my childhood are on the plates leaving my kitchen. My great grandmother’s mac and cheese, buttermilk biscuits and cornbread all make an appearance on our menu, this is the food that I am passionate about, and I hope our guests taste it and it gives them a sense of nostalgia.
